The use of vinegar and fruit has a long history stretching
back as far as the Babylonians. Vinegar was used a preservative for the fruit
ensuring it kept through the seasons. Utah, with its abundance of fresh fruit
and long cold winters has long embraced this ancient tradition. Shrubs were
born out of necessity but have recently become very en vogue and are typically
enjoyed as a refreshing and healthy beverage during the summer. However, the
winter is also a great time to enjoy shrubs, although the recipes might differ
a bit. Many local supermarkets now sell shrubs (sometimes labeled drinking
vinegar) but with minimal effort these delicious drinks can be made at home.
