The spring is often a hectic time of year. There’s so much
to get done that it can be hard to have the foresight to properly prepare a
garden. However, some of the most delicious vegetables love the cool, wet spring
weather, making this a prime season for gardening. Take a look at the list
below for some ideas of vegetables that can go in the ground as soon as the
snow melts.

Lettuce
Lettuce needs a little love but
it’s actually really easy to grow. It thrives in the cool, wet spring weather
and often can be harvested up to 3 times. The only thing to be mindful of with
lettuce is that it needs some frost protection if you plant it in the early
spring. Also, look for cut and come again
varieties to get multiple harvests.

Peas
Whether it’s shelling peas, sugar snaps, or
snow peas this is one of the best spring vegetables for your garden. Peas
should be planted as early as possible as they can tolerate (and even enjoy)
cool weather but they can’t stand heat. Peas are great because they are
delicious and often offer plentiful harvests. Just don’t wait too long to get
your peas in the ground.

Asparagus
Asparagus seems to intimidate gardeners.
It’s an expensive vegetable often served in high-end restaurants but that doesn’t
mean we can’t grow it even better at home!
Asparagus is a perennial that will produce better harvests each year. If
you have a designated spot in your garden, it’s hard to grow a vegetable more
awesome than asparagus.

Rhubarb
Rhubarb is another perennial that will need
some designated garden space. Rhubarb is technically a vegetable but it is
often used in pies and other sweet treats. However, rhubarb can be quite
versatile in the kitchen and it couldn’t be easier to grow. Make sure not to
harvest rhubarb too late because it grows very dense and tough roots.
